Seasoning Your Griswold Dutch Oven

The highest quality collectible iron cookware (dutch ovens) are by Griswold and Wagner (Wagner purchased Griswold, hence Griswold and Wagner). All kinds of stuff has been published on the various makers of cast iron cookware (including Dutch Ovens). There are even books on how to appraise them available.

While it’s a rarity that you run across a Griswold Dutch Oven in a store, you can still find them from time to time in antique shops, thrift stores and even the occasional garage sale! And the best thing of all is that they can be found for a fraction of what they’re worth.

Griswold Dutch Ovens should be prepped before use, because these items are often bought used and come rusty or with the patina completely worn off.

So, before you use your new cast iron pot, you’ll have to wash the iron pot throughly, then make sure you dry it properly. Then you take a clean rag that you dunk in basic vegetable oil (canola oil works too) which you then wipe the whole pot with.

Once the oil has been applied, you need to heat your oven to 350 degrees fahrenheit and put your Griswold Dutch Oven in there (bottom facing up) for about an hour. Take it out and allow it to cool down in a safe spot.

Now it’s been “seasoned”.

Also in regards to day to day use of the pot, they recommend that you not use soap or other detergents when cleaning it… just wash it and scrub it down. If necessary apply some oil to it before you store it (to prevent rust to build up).

Books were written about both products in regards to the different types of cast iron cookware as well as information on how much these things are worth. When getting your used Griswold skillet, it’s got to be seasoned, simply because used iron skillets have often been scrubbed free of the shiny coating (the patina) and are rusty.

Here’s how you can season your “new” used griswold skillets:

Before doing anything you’ll need to wash the pan in hot water and some soap, then dry it. If your pan has a lot of old build up, be sure to wash it thoroughly. Immediately after cleaning, wipe the surface with a dry towel saturated with cooking oil (but make sure to wring it once before you apply anything… it’ll be easier to use).

Then, put it upside down into a preheated oven (350 degrees) and heat it for one hour. Once the hour is up take skillet out of the oven and let it cool off (in a place where your kids or grandkids can’t get their hands on it… be careful it’s VERY hot).

How to clean your Griswold skillets after cooking.

After cooking you need to rinse it with hot water and lightly scrub the pan (don’t go too crazy, you want some of the “grease” / oil on the pan) and put the skillet under water to rinse it off. Try not use too harsh of dish soap on the skillet (if any at all), and dry it right away after washing it.

Here’s how you do it:
Before doing anything you’ll need to clean the pan in soapy water, then make sure it gets dried. Immediately after cleaning, wipe the surface with a dry towel soaked with vegetable oil.

Put it with the bottom facing up in an oven at three hundred and fifty degrees for one hour. Then take skillet out of the oven and let it cool off.

How to clean a Griswold Cast Iron Skillet after day-to-day use:
When you’re done cooking use some hot water (with a bit of soap) and lightly scrub the pan and rinse it under warm water.

Don’t use a lot of soap on your iron skillet, and make sure you wipe it dry as soon as you’re finished cleaning it.
